Certificate III in Commercial Cookery
Head chef and venue management roles pay well above the qualified cook range.
Existing kitchen employment often satisfies the service requirement
Course overview
About this qualification
Every commercial kitchen in Sydney is short of qualified cooks, and a great many of the people already working in them have no certificate. That works until you want a chef de partie title, a visa outcome, or a job at a venue whose insurer asks who is qualified.
The Certificate III in Commercial Cookery is the trade qualification for cooking. It covers preparation and cookery methods across all the major sections, kitchen organisation and mise en place, menu planning and costing, food safety and hygiene to the standard the regulator expects, and the teamwork and pace that make a service run rather than collapse.
For experienced cooks this is a strong RPL candidate — you have been performing the units nightly for years. What assessors need is evidence: employment references, menus you have worked to or written, food safety certification, and often a practical demonstration. If you trained in another country's cuisine, that experience counts, though expect focused attention on Australian food safety requirements.

Questions we get asked
Frequently asked questions
Yes, and it is one of the more successful RPL trades. Employment references on venue letterhead, menus you have cooked or written, payslips, your food safety certification and photographs of your work all support it. Most assessments also include a practical component — reasonable, given the trade.
It counts substantially. Overseas kitchen experience is real experience, and cuisine specialisation is an asset rather than an obstacle. The area that typically requires attention is Australian food safety and hygiene regulation, which differs from many countries and is assessed strictly.
Food safety is covered within the qualification, and venues in NSW also have their own Food Safety Supervisor requirements depending on the business type. We will clarify what your specific venue or intended role requires so nothing is missed.
The qualification requires demonstrated service periods in a commercial kitchen. If you are already employed in one, that generally satisfies it in your current workplace, which removes the usual scheduling problem. If you are not, the RTO arranges placement.
Cookery appears on Australian skilled occupation lists at various times, and a trade qualification is usually part of any skills assessment. Migration outcomes are decided by the Department of Home Affairs and the relevant assessing authority — see a registered migration agent for that advice. We handle the qualification side.
